Holiday Mix Mixed Olives Feta (Print version)

A festive blend of marinated olives and creamy feta with herbs and lemon zest for flavorful bites.

# What You Need:

→ Olives & Cheese

01 - 1½ cups (about 225 g) mixed olives, green and black, pitted
02 - 200 g feta cheese, cut into 1 cm cubes

→ Marinade

03 - 3 tbsp extra virgin olive oil
04 - 1 tbsp freshly squeezed lemon juice
05 - 1 tsp dried oregano
06 - 1 tsp fresh thyme leaves (optional)
07 - 1 small garlic clove, thinly sliced
08 - ½ tsp red pepper flakes (optional)
09 - Freshly ground black pepper, to taste

→ Garnish

10 - 2 tbsp fresh parsley, chopped
11 - Zest of ½ lemon

# How to Make:

01 - Place mixed olives and feta cubes into a medium bowl.
02 - In a separate small bowl, whisk together olive oil, lemon juice, oregano, thyme (if using), sliced garlic, red pepper flakes, and black pepper.
03 - Pour the marinade over the olives and feta. Gently toss to ensure even coating, taking care not to break the feta cubes.
04 - Cover and refrigerate for at least 30 minutes or up to 4 hours to develop flavors.
05 - Bring the mixture to room temperature before serving. Sprinkle with chopped parsley and lemon zest. Toss gently and serve.
